Purpose of the role:
Responsible for the successful operation of the Wildhawk bar, while supporting beverage team. They will develop and lead a passionate bar team to deliver exceptional service and cocktails. In addition, will be responsible for scheduling and executing the special events.
Responsibilities:
Management
- Following PlumpJack’s core values: Honest, Approachable and Passionate, responsible for hiring, training, scheduling, supporting, reviewing and coaching employees directly accountable to their position. Maintain highest possible levels of employee morale and bar productivity, all while maintaining HAP.
- Responsible for initiating training program for all new bartenders and train staff on new specialty drinks.
- Ensure consistent communication with the team via regularly scheduled staff meetings to include safety tailgates and beverage training.
- Properly document Personnel/Payroll transactions, as directed, for processing in the accounting department.
- Partners with the management team on a regular basis to help maintain company standards, team accountability, and morale.
- Complete payroll reports and prepare final time-log for bi-monthly payroll.
- Monitor and control bar expenditures and payroll to ensure that operational standards are met while maintaining annual budget.
- Create monthly schedule, accommodating time off requests.
- Collaborate with the management team to develop promotions and special events to drive sales and enhance the guest experience.
Administrative
- Establish and maintain bar policies and procedures, including service style, to ensure professional standards of bar operation.
- Review service and quality standards as measured by guest reviews, correspondence and mystery shopper programs.
- Participate in the coordination of all bar marketing, public relations and advertising.
- With the support of the bar team, create a unique cocktail menu, change based on seasonality relationships with spirit brands and cost to maintain standards of an upscale bar.
- Regularly review all beverage pricing to ensure profitability.
- Complete monthly inventories and establish purchasing guidelines.
- Control beverage inventory, variety and cost to maintain adequate supply, quality and profitability.
- Represent the bar and local community with grace and positivity.
- To be on-site for any building or bar renovations.
- Weekly liquor and product orders.
- Receive liquor orders, checking to see if orders are correct.
- Submit weekly petty cash requests, weekly sales reports, and approved invoices to accounting. Weekly bank trips to cash petty cash checks.
- Host private and sponsored events—creating special menus for each event.
- Hosting cocktail classes.
Bar Operations
- Extend courteous, friendly and professional greeting to guests as they arrive to thank them as they depart and comply with all universal service standards. Continually interact with guests to ensure personalized service.
- Respond to all guest needs and requests in a timely and professional manner.
- Follow all specified procedures to properly open and close the bar, running reports and performing all necessary side work.
- Prepare charcuterie & cheese boards for service.
- Assist with washing, drying, and restocking glassware & dishes.
- Prepare garnishes for service bartender to help expedite service.
- Abide by state liquor service standards, particularly those prohibiting service to minors and intoxicated persons.
- To provide properly mixed cocktails and other beverages, as requested, to service staff and the public.
- Use suggestive selling techniques to promote the sale of food and beverages
- Understand or be willing to learn about classic & modern cocktails, spirits, house cocktails, produce, etc.
- Check ID’s when no Security Guard on duty.
- Check the cleanliness of the guest restrooms every hour.
- To be able to perform all positions and fill in if/when necessary.
Other Duties
- Maintain compliance with local safety and health ordinance regulations & bar safety standards.
- Represent and market Wildhawk in a positive and professional manner as requested and continually promote Wildhawk internally and externally by attending special events when requested and building relationships both on and off property.
- Promote and comply with all policies and procedures of PlumpJack.
- Immediately report all suspicious occurrences and hazardous conditions and avoid injury to self and others.
- Always maintain the cleanliness and safety of work areas and equipment.
- Attend all mandatory meetings as directed.
- To perform other tasks, including cross-training, as directed.
- Adhere to the attendance and punctuality policy as outlined in the PlumpJack Employee Handbook. To report to work as scheduled and be prepared to start work.
Minimum Candidate Requirements:
- 2-5 years’ experience managing a bar or beverage service operation.
- Thorough knowledge of all aspects bar operations and budgets.
- Complete working knowledge of alcoholic and non-alcoholic beverages, and service standards and procedures.
- Must have current Food Handler and Responsible Beverage Service Certificate that reviews all California liquor laws (supervisory levels).
- Familiar with OSHA, SB198, local department of Health Regulations, California Liquor laws and relevant current laws governing handling hazardous substances, working knowledge of local safety laws, investigation methods, fire codes and life safety codes.
- Demonstrated ability to train staff and ensure high end customer service.
- Detail oriented, organized, and efficient.
- Diplomatic and calm with strong verbal communication skills.
- Courteous, friendly, and professional manner.
- Good team player. Customer service focus. Able to work productively with little supervision. Trustworthy and reliable.
Working Conditions:
Works indoors mainly in adequately lighted bar area. Work areas may be crowded or noisy. Bar floors may be uneven and may be slippery. Exposed to weather conditions while supervising outdoor service areas.
Physical Demands:
Stands/walks approximately 80% of shift. Sits at desk or in meetings approximately 20% of shift. Frequently walking up and down stairs. Occasionally required to handle and move objects weighing up to 50 lbs. over short distances. Bends, stoops, reaches, pushes and lifts to perform routine tasks. Must be able to work well under pressure. Flexibility required to work long, sometimes irregular hours.
